What better way to get through the icy melt of a post-winter storm than with chocolate cupcakes with peanut butter icing? I made these last night and put the icing in the blast chiller (aka out on the deck) so will have to frost them later as I remembered the icing in this morning. I'm at my 3 different clinics over the next 3 days so, if they last that long, will spread the love. If they don't last, well, I guess I'll just have to make more.
Hold doors for people: It's cold out. It's hard to juggle several things at once while wearing mittens. And many people suffer from depression, especially in the winter, so could use a bit of a boost from a little gesture. There are so many little gestures on this list that really are the little things but they're effect is so great. Smiles are contagious. Which reminds me, don't forget to wash your hands. Spread smiles, not viruses.
PS: This is a completely non-healthy cupcake recipe.
I challenge myself... a lot.
